Homogenization unit that breaks down milk fat globules using a high-pressure piston pump. Operating pressure of 150 / 250 bar.
About This Product
Milk is passed through a narrow valve gap under high pressure. The resulting shear stress and cavitation break down fat globules, increasing their surface area; thereby preventing cream separation on the milk surface and achieving a thicker structure in yogurt. Homogenization is typically applied within the pasteurization line when milk is in the 55–65 °C range. In two-stage homogenizers, the second stage prevents re-agglomeration of fragmented globules.
